Today best known in the form of the gin based “Tom Collins”, you could describe a Collins as simply a sour served in a fairly tall glass with ice and soda water. The drink is usually made by simply stirring the lemon juice, sweetener, and spirit into an ice filled glass and then topping it with soda water.
