I`m soon posting a blog post on this topic and what i know about it so far. What i`m trying to find out is if both the 151 proof demerara and the 80 proof will be produced by Mosaiq. Another thing you could do..maybe...if that`s your thing..is start a cocktail blog, its fun, gives you something to do and you learn a lot, get great friends and as a plus on it all - sometimes you get booze too.

I believe one problem is that copper is very expensive and that is because demand has increased and there´s a global demand of copper raising the prices. Are there not bigger mojo molds available?

Thanks Darcy for this informative explanation.The only problem with the layering method is that it would take time, but having several ice trays to layer would help. i think i`ll try this method when i need nice ice for cocktail photography for instance. T

Interesting. Does the bicarbonate add any trace at all of saltiness? I always boil my syrups with the fruit until the sugar is dissolved, then i add some fresh fruit as well after when its cooled a little bit and then leave to sit until i like the flavour.
