    There aren't too many books on sugar, that relate to its culinary / drink use. But there is a lot of information available in different sources, like books from Harold McGee and Herve This. I'm actually doing a session this year, at Tales of the Cocktail, called the "Science of Sweet"...

    I haven`t heard of any books about sugar but i wrote a blog post about sugarcane, i dunno if that helps but you may take a look - Cheers! T
