    Distilling is quite scientific and usually requires a chemistry and specialist distilling qualification from what I understand (to work in a commercial distillery at least). There are quite a few home distilling sites out there, just use the oracle (google), and they provide step by step instructions...

    I'm guessing that in addition to the grains involved (do grains have terroir?), the yeast would have a great effect on the final product much as it does in both beer and winemaking. I'm sure that the stills and the cuts the distillers make also has a great effect. I don't know how barrels...
